Pumpkin Coffee Cake

I am currently obsessed with anything pumpkin.  Pumpkin Spiced Coffee, pumpkin beer, Little Debbie Pumpkin Delights, I'll try anything.  It is like Fall comes along and I think I must consume all things pumpkin.  Last night, I tried my hand at a pumpkin coffee cake.  And it turned out delicious.  (If I do say so myself). It was also relatively easy to make.  I adapted this from several other recipies.


1 box yellow cake mix
1 can pumpkin puree
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon all spice
1 tablespoon vanilla

I made the cake mix according to the directions and then added the pumpkin, spice and vanilla.  I then baked at 350 for 20 minutes.  This way the cake is firm enough to hold the crumbs.

Crumb topping:
3/4 stick softened butter
1 1/4 cups flour
2/3 cup sugar
splash of vanilla
cinnamon (until well speckled.)
I used my hands to mix all together and squish until crumbly.  Depending on how soft the butter is, you may have to add more or less flour. 

I took the cake out, added the crumb and baked an additional 20 minutes.  The cake is very moist, so it took a bit longer than the box calls for.

Before I served the cake, I sprinkled with confectioner's sugar.  I would have taken a picture, but it is all gone :)
