Hi Five for Friday

Today, I honestly am having trouble focusing on anything other than my flight to London at 9:50, but I will be thankful for that next week.

1. Payday arriving the same day as my vacation begins. Score!

2. Matt's mom made me dinner the other night before my trip, it was so incredibly kind. I am a lucky girl.

3. I went to the orthopedic on Wednesday, and she told me no cortizone shot for right now.  Apparently, I am a physical therapy rock star!

4. I got a gel nail polish manicure.  It feels so girly and I love it.

5. Mom's good news.

Asian Chicken Salad Sanchwiches

So, the other day I saw a pin on Pinterest that sparked my interest.  The pin was 52 uses for rotisserie chickens.  But when I clicked through, there were only about 6.  LET DOWN.  I love rotisserie chickens.  They are amazing and I use them for a ton of different things.  So I want to share today's recipe.  I thought this up a while back and it is a family favorite.

Asian Slaw:
1 bag broccoli slaw or rainbow slaw
1 bag shredded red cabbage
Dressing (I make this in a mason jar or something with a lid so I can shake it up)
2 tbsps. prepared ginger
1 tsp. wasabi sauce
2 tbsps. sugar
1/4 cup low sodium soy
1/2 cup apple cider vinegar
1/2 cup oil
mix it together and let sit for at least an hour.

Chicken Salad:
2 cups cooked chicken, diced
1 small onion minced
1/3 cup sweet chili sauce
1/3 cup mayo (forgot it in the picture above)
1/3 cup chili garlic sauce (found in most Asian food aisles at the market)

Now for the chicken salad.  Starting with my rotisserie chicken, I pick the whole chicken clean, and then dice the chicken. I had a lot of chicken left over, another meal for another night.  I mince one small onion. (I used half of the one shown here, it was pretty big.) In another container, I mix the wet ingredients together.
Next, I add the wet to the chicken and onion and mix it all up!

For the bread, I either use Tandoori Naan or Pocketless Pita.  I toast both sides on a dry skillet, just so there is a bit of crunch on the bread.

Finally, we get to the assembly. I cut the pita in half and spoon some chicken salad on top, then add some slaw on top of that.  Slap the top on, cut in half and serve with lots of napkins and a fork to pick up all the yumminess that falls out.

Happy Friday!!!

Here is what I am most thankful for this week:

1. Iced coffee. I still need caffeine, even when it is hot. So, learning to make my own iced coffee has been a god-send. 

2. The tomatoes in our garden had turned out beautiful.  I have eaten so many this week and I can't wait to make salsa this weekend!

3. One more week of work until THE OLYMPICS.  YES!

4. The new-ish Florence & The Machine Album.  I am a bit late getting it, but I did for $0.99 on Amazon and am LOVING it.

5. My friends and family.  After the tragic shooting in Colorado overnight, I am reminded how special each and everyone is.  I am thankful for them.

High 5. Friday.

Friday is here again, and this one is the 13th.  Hopefully, it will be lucky for some of the people in my life.  I am thankful for the following things this week. 

1. Tomatoes from the garden.  Good on sandwiches, in pasta and assorted other concoctions.  <3

2. An escape to Wildwood.  Makes the kid in me so happy.

3. To that end, Duffer's, Kohr's Bros, and Sam's Pizza. 

4. PB for allowing me to stay with her.  I am forever grateful for her, not just for letting me stay there, but for the love she gives to me, and for the tremendous love and support she gives mom.  It is funny how when you get older how much you appreciate the people that love your loved ones.

5.  The VERY nice boy from Sallie Mae who did NOT scream at me at me when I didn't understand what happened to my student loans.  (unlike the 1st guy I talked to who told me that for the 300th time, He didn't care to "fix my economic situation" when I was just asking where the additional $300 a month came from)

Hi Five for Friday! Patriotic Version

Happy Friday friends! Here is what I am thankful for this Friday. 
1. We went to see the Philly Pops! do Pops on Independence.  Free concert and very patriotic show.  It was a really nice time, sitting on the lawn and eating food and hanging with friends.

2. Time with friends and family.  Holiday weekends are always filled with family obligations, but as busy as we can get, I am thankful to have the family and friends around me. 

3. Blueberries.

4. Mom's birthday gift was rocking fantastic, go Leigh & I!

5.  U2 - 22 digitial downloads.  So awesome.
