Pumpkin Coffee Cake

I am currently obsessed with anything pumpkin.  Pumpkin Spiced Coffee, pumpkin beer, Little Debbie Pumpkin Delights, I'll try anything.  It is like Fall comes along and I think I must consume all things pumpkin.  Last night, I tried my hand at a pumpkin coffee cake.  And it turned out delicious.  (If I do say so myself). It was also relatively easy to make.  I adapted this from several other recipies.

Cake:

1 box yellow cake mix
1 can pumpkin puree
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon all spice
1 tablespoon vanilla

I made the cake mix according to the directions and then added the pumpkin, spice and vanilla.  I then baked at 350 for 20 minutes.  This way the cake is firm enough to hold the crumbs.

Crumb topping:
3/4 stick softened butter
1 1/4 cups flour
2/3 cup sugar
splash of vanilla
cinnamon (until well speckled.)
I used my hands to mix all together and squish until crumbly.  Depending on how soft the butter is, you may have to add more or less flour. 

I took the cake out, added the crumb and baked an additional 20 minutes.  The cake is very moist, so it took a bit longer than the box calls for.

Before I served the cake, I sprinkled with confectioner's sugar.  I would have taken a picture, but it is all gone :)

Hi 5 for Friday (X 3, since I didn't do one 2 weeks in a row)

Another end to another work week.  Some days I feel like I wish my life away just waiting for the glorious weekend.

1. Fi, for the use of her flat! She was an amazing host for my Olympic adventure.  (even though she was only there for 2 days).

2.  London's awesome public transportation system.  Without it, getting around London would be difficult and expensive.

3. Cadbury.  I love their chocolate.  I can't help myself.

4. The Olympics!  I have an absolutely fantastic time.  They were amazing, fun and something I will tell my grandkids, "Back when I was young, I went to the Olympics."

5. Sarah Schaffer.  She was a darling and picked me up to bring me to Leigh's final flight.  She is an absolute delight and I am so glad I got to meet her and her little one.  She is such a good friend to Leigh, too, so that makes her extra special.

6. Getting to see Leigh's final flight at Mildenhall.  I am so happy that I was there to share in her moment.  I even got to squirt her down with water. 

7. Spending the day in Caimbridge with Leigh.  So Fun, great sister time.

8. Lauren.  What can I say about my oldest friend? I am so thankful and happy that we got to do the one thing we have wanted to do pretty much our entire lives.  We went to the Olympics.  It wouldn't have been as special and wonderful with anyone else.  I am not sure anyone else geeks out quite as much about the Olympics as I do.  She is wonderful and extremely special to me.  The best.  <3>
9. My bed.  After spending 10 nights away from it, I was so happy to sleep in it again.

10. Dad, not only did he pick me up from the airport, but he took my car to get the oil changed this week while I was at work.  He's a good guy.

11. Mom.  She is good to me, and she is about to embark on a whole new chapter in her life. 

12.  My new purple wallet.  It rocks.

13. Draw Something.  My new obsession.

14. Beets.  Don't laugh. I love them.

15. Getting to spend time with Leigh while she is home. Heck its just nice to have her in a close time zone!

Hi Five for Friday

Today, I honestly am having trouble focusing on anything other than my flight to London at 9:50, but I will be thankful for that next week.

1. Payday arriving the same day as my vacation begins. Score!

2. Matt's mom made me dinner the other night before my trip, it was so incredibly kind. I am a lucky girl.

3. I went to the orthopedic on Wednesday, and she told me no cortizone shot for right now.  Apparently, I am a physical therapy rock star!

4. I got a gel nail polish manicure.  It feels so girly and I love it.

5. Mom's good news.

Asian Chicken Salad Sanchwiches

So, the other day I saw a pin on Pinterest that sparked my interest.  The pin was 52 uses for rotisserie chickens.  But when I clicked through, there were only about 6.  LET DOWN.  I love rotisserie chickens.  They are amazing and I use them for a ton of different things.  So I want to share today's recipe.  I thought this up a while back and it is a family favorite.

Asian Slaw:
Base
1 bag broccoli slaw or rainbow slaw
1 bag shredded red cabbage
Dressing (I make this in a mason jar or something with a lid so I can shake it up)
2 tbsps. prepared ginger
1 tsp. wasabi sauce
2 tbsps. sugar
1/4 cup low sodium soy
1/2 cup apple cider vinegar
1/2 cup oil
mix it together and let sit for at least an hour.


Ingredients:
Chicken Salad:
2 cups cooked chicken, diced
1 small onion minced
1/3 cup sweet chili sauce
1/3 cup mayo (forgot it in the picture above)
1/3 cup chili garlic sauce (found in most Asian food aisles at the market)

Now for the chicken salad.  Starting with my rotisserie chicken, I pick the whole chicken clean, and then dice the chicken. I had a lot of chicken left over, another meal for another night.  I mince one small onion. (I used half of the one shown here, it was pretty big.) In another container, I mix the wet ingredients together.
Next, I add the wet to the chicken and onion and mix it all up!

For the bread, I either use Tandoori Naan or Pocketless Pita.  I toast both sides on a dry skillet, just so there is a bit of crunch on the bread.

Finally, we get to the assembly. I cut the pita in half and spoon some chicken salad on top, then add some slaw on top of that.  Slap the top on, cut in half and serve with lots of napkins and a fork to pick up all the yumminess that falls out.

Happy Friday!!!

Here is what I am most thankful for this week:

1. Iced coffee. I still need caffeine, even when it is hot. So, learning to make my own iced coffee has been a god-send. 

2. The tomatoes in our garden had turned out beautiful.  I have eaten so many this week and I can't wait to make salsa this weekend!

3. One more week of work until THE OLYMPICS.  YES!

4. The new-ish Florence & The Machine Album.  I am a bit late getting it, but I did for $0.99 on Amazon and am LOVING it.

5. My friends and family.  After the tragic shooting in Colorado overnight, I am reminded how special each and everyone is.  I am thankful for them.

High 5. Friday.

Friday is here again, and this one is the 13th.  Hopefully, it will be lucky for some of the people in my life.  I am thankful for the following things this week. 

1. Tomatoes from the garden.  Good on sandwiches, in pasta and assorted other concoctions.  <3

2. An escape to Wildwood.  Makes the kid in me so happy.

3. To that end, Duffer's, Kohr's Bros, and Sam's Pizza. 

4. PB for allowing me to stay with her.  I am forever grateful for her, not just for letting me stay there, but for the love she gives to me, and for the tremendous love and support she gives mom.  It is funny how when you get older how much you appreciate the people that love your loved ones.

5.  The VERY nice boy from Sallie Mae who did NOT scream at me at me when I didn't understand what happened to my student loans.  (unlike the 1st guy I talked to who told me that for the 300th time, He didn't care to "fix my economic situation" when I was just asking where the additional $300 a month came from)

Hi Five for Friday! Patriotic Version

Happy Friday friends! Here is what I am thankful for this Friday. 
1. We went to see the Philly Pops! do Pops on Independence.  Free concert and very patriotic show.  It was a really nice time, sitting on the lawn and eating food and hanging with friends.

2. Time with friends and family.  Holiday weekends are always filled with family obligations, but as busy as we can get, I am thankful to have the family and friends around me. 

3. Blueberries.

4. Mom's birthday gift was rocking fantastic, go Leigh & I!

5.  U2 - 22 digitial downloads.  So awesome.

Last Friday in the month!

Today's Hi Five for Friday is brought to you by Dunkaroos! (only because I have had the song from the commercial for the last week) This week I am thankful for the following things:

1.  On Saturday, mom and I had a rocking spa day.  Complete with a massage, facial and manicure.  It was kind of crazy to have that much pampering, but it was really nice.  Thanks to Dad for getting us the gift certificate.

2. I started physical therapy this week and really had a hard time with it when my therapist Brian, taped up my knee.  It was a scary reminder of where I have been and how difficult the journey had been at times.  I have resolved to push through and work hard to help my knee.  I even rode the bike for 10 minutes, something I haven't done in 5 years. 

3. I love nail polish.  I bought a white and a sparkly blue for a $1.99 a piece to complete my patriotic finger nails.  Practicing to be super Team USA at the Olympics.

4. Fresh basil from mom's garden.  It smells like heaven and tastes amazing.  Although, I am convinced it is really a weed the way it has been taking over the garden.  Can't wait for all the other goodies to grow.

5.  My boyfriend M, got a job, and I am so thankful that prayers have been answered.  I hope it leads to good things in the future.  My cousin has a 2nd interview for a really good postition and I keep my prayers going and my fingers crossed.

Friday is here again!

This week's top 5 is brought to you by the letter F.  As in Friday.  And Fun.  And Fraggles.

1. I finally broke down and bought a Clinique Chubby Stick for the wedding makeup.  It was well worth the $16 price tag, as it was the right color and consistency.  I hate lipstick and the way it tastes and feels.  I think I look ridiculous wearing it.  But without any color, my lips look pale and sad when I am wearing makeup.  I got Super Strawberry and love it.

2. One of my very favorite eateries has finally reopened after over a year of being closed.  They had a fire last year and I have greatly missed their pizza turnovers and there hasn't been a good pizza to be had in all of south Jersey since. 

3.  I bought the new Skinny Cow swirled ice cream sandwiches.  AWESOME.

4.  Dice For Buddies on my phone :)

5. Mom and I made father's day dinner for my dad, and my boyfriend and his mom & brother came over.  It is a sad day for them, since his father passed away.  But it is so refreshingly wonderful how well my family and their family get along. I do not forget how lucky I am every day.

Friday, Friday, Friday

I am keenly aware it has been well over two years since I wrote my last post.  I thought I would bring it back around by this High Five for Friday post.  Things that made me happy this week.  (Kind of like a things I am grateful for reminder).

1.  I saw a new doctor about my knee.  I am really happy with how honest and real she was.  I also appreciated how she actually listened to me.  It was a big positive.

2. The beautiful wooden chrysanthemum earrings mom brought me back from Alaska.  New favorite piece of jewelry.  Makes a girl very happy.

3. Cherries are BACK.  Nothing tastes quite as sweet as summer cherries.  I love them.

4. I have a good friend's wedding tomorrow and I will be very happy to spend the time sharing in their day.

5. The weather in this latter part of the week has been gorgeous! That is something to be truly grateful for.
